Fragolas Print Recipe

Serves 6

This is a refreshing (and sensuous) Italian cocktail that uses fresh strawberries and Prosecco, an inexpensive sparkling white wine from Italy. Any dry sparking wine that you like could be substituted including a Spanish Cava or California sparkler..

1 cup stemmed and sliced fresh strawberries
2 teaspoons sugar, or to taste
1 teaspoon fresh lime juice, or to taste
1 750 ml bottle of Prosecco, well chilled
6 mint sprigs, optional

Either by hand or with a blender puree the strawberries and sugar. Strain through a fine mesh strainer pressing down to capture as much of the fruit pulp as possible. Discard seeds and add lime juice. Adjust sweet and sour to your taste, it shouldn’t be too sweet. Cover and refrigerate for at least one hour for flavors to develop.

Divide strawberry mixture among six chilled champagne glasses. Pour Prosecco over and serve garnished with a mint sprig if desired.
