Dear Beth,
The April issue of EatingWell magazine has an interesting article
by David Dobbs, "The Wild Salmon
Debate", on choosing wild vs.
farmed salmon. The article includes
some of my favorite salmon recipes
which I hope you'll enjoy. (A

Close to my home it looks like California
and Oregon might not have a wild
salmon season this year due to the alarmingly
small number of returning salmon
to their breeding places.
Most
agree that the future of
fish in our diet will come
from farm raised sources. The
sad truth is that our
oceans are being over fished
and soon will be beyond their
capacity to supply a rapidly
expanding world population. The
challenge for us all is to
become more familiar with
those fishes and shellfishes
which can be sustainably
and wholesomely farm raised. If
